consumption of meat. By emphasizing the fact that every piece of beef, pork
or poultry we consume once had parents and a personality (or animality?),
Masson hopes to force people to admit that decisions about their diets should
be based not only on health, but also on ethics. He documents some of the
more brutal practices in industrial food production, alongside scientific
evidence that the pigs, calves, and chickens who are the victims of this
cruelty definitively demonstrate emotional response and awareness of the
torture they are enduring. One of the more intriguing (and stomach-churning)
arguments Masson makes against meat consumption is the fact that animals
react chemically to the stress of their impending slaughter, meaning that the
steak on your plate is full of the hormonal equivalent of fear and distress.
