如何冷凍整條的黑鮪魚 - 社會議題

剛宰殺完後的黑鮪魚,用ILF液態急速冷凍(-50度)後,浸泡凍結了20分鐘左右,黑鮪魚居然裂開好幾處!我知道是膨脹的因素,但是又不知道怎麼做。想請教前輩和專家,我要如何的將黑鮪魚急速冷凍,又不會讓黑鮪魚產生冰裂?是不是將溫度調高,或是分不同溫度槽冷凍,還是將凍結時間縮短?求助各位
